History of cocoa

Cocoa has been known as a delicacy for over two millennia. The oldest evidence dates back to clay vessels from Honduras. A substance that occurs only in cocoa was detected on these clay vessels.

The taste and stimulating effect were already appreciated back then. Cocoa was sometimes drunk from special vessels that even served as grave goods. Cocoa or cocoa beans were also used as a means of payment due to their high value.

In the 16th century, cocoa was brought to Europe by Cortez, but it initially found little favor. It was only after cocoa was refined with honey and cane sugar at the Spanish court that Europeans developed a taste for it. Since cocoa was very rare, initially only the nobility could afford to enjoy it.

From cocoa to chocolate

At the beginning of the 19th century, the Dutchman Van Houten developed a process in which cocoa is separated from cocoa butter by pressing the beans. This process spread cocoa throughout Europe, and the first chocolate factories were founded. At that time, cocoa was even sold in pharmacies.

The first milk chocolate was created in 1875. The Swiss Daniel Peter was the first to mix milk powder with cocoa mass. Milk chocolate was born.

Today, Germans consume about 9.3 kg of chocolate per year. As you can see, chocolate remains very popular.

What is cocoa?

What we call cocoa are the seeds of the cocoa tree, which develop their full aroma through drying, fermentation, and roasting. The cocoa tree grows in tropical regions, and its flowers grow directly on the trunk. Once the flowers are fertilized, cucumber-like fruits form, containing the seeds surrounded by white pulp.

What are amino acids?

Eight of the total 21 amino acids cannot be produced by the human body itself. They must be supplied externally to build the necessary body proteins in sufficient quantities in the human organism. These eight amino acids are therefore called essential amino acids.

Hemp protein contains all eight essential amino acids and is therefore of very high quality. The main component is the globulin edestin, which is even more digestible than soy protein. Hemp seeds thus represent a good protein source for humans; the human organism can produce all essential proteins from hemp protein. Due to the similarity with the globular proteins of blood plasma, the organism can easily form immunoglobulins from hemp protein, which play an important role in infection defense.

What are hemp seeds?

Hemp seeds are undoubtedly one of the most nutritionally valuable oil fruits. For thousands of years, hemp seeds and hemp oil have been used for human nutrition.

Since the mid-1990s, industrial hemp has been celebrating its comeback as a renewable resource and supplier of high-quality fibers and seeds. Science has only discovered the high value of hemp seeds in recent years and predicts a great future for hemp as a seed and oil plant.

From a botanical point of view, the fruit of hemp, the hemp seed, is a nut (nutlet) surrounded by a thin, glassy fruit shell.
